Lettuce wraps using Zesteez’ Combo Chutneys!

It is summertime and I am always eager to make something new and easy  especially as my high schooler/4th grader are always upto some activities and are perennially hungry afterwards :). What better option than lettuce wraps since I stock these chutneys to always whip up something quick!  A lettuce wrap is a crunchy (love the iceberg/Romaine lettuce)  snack or an appetizer and visually appealing.

For our lettuce wrap, we chose the crispy Iceberg lettuce but you can choose another type such as Romaine lettuce as long as you feel it can hold all of your delicious ingredients in place.

So, let us dive right into making the the #TrioLettuceWrap. It is as simple as using the #delicious  easy-to-infuse trio chutneys – Mango , Mint and Tomato along with veggies and (limited by your imagination) proteins that match well with the greens, veggies etc and there you have it, voila!!

PS: I tried with all the 3 chutneys and it is optional.

Ingredients: For making Lettuce wrap using Tomato chunky chutney

  • Tomato Chunky Chutney – 2-4 Tbsp per your taste needs
  • Bella mushrooms – Sliced
  • Carrots – julienned or you get them pre-cut
  • Mixed peppers – Thinly sliced
  • Baby kale – A handful
  • Iceberg/Romaine lettuce – 1 (or more) leaf rinsed and ready fill-in
  • Salt – To taste
  • Pepper – To taste
  • Dill – For garnish

Ingredients for making  lettuce wrap using Mango Tango Chutney

  • Mango Tango Chutney – 2-4 Tbsp per your taste needs
  • Extra firm Organic tofu – Diced
  • Baby bell peppers – Thinly sliced or julienned
  • Petite peas – (ready to go in the frozen aisle at any grocery store) Vons, Albertsons
  • Salt – To taste
  • pepper – To taste (if you wish)
  • Dill – garnish
  • Iceberg/Romaine lettuce – 1 (or more) leaf rinsed and ready fill-in

Ingredients for making lettuce wrap using Mint cilantro chutney

  • Mint Cilantro Chutney – 2-4 Tbsp per your taste needs
  • Chicken-less Strips – 1/4 pack, (from TJ’s or Vons) or use any other protein like chicken etc
  • Petite peas – 1/4 cup
  • Baby corn- 1/4 cup
  • Baby Bell peppers – Thinly sliced and ready
  • Salt – To taste
  • Pepper – To taste
  • Dill – To garnish
  • Iceberg lettuce – 1 leaf, ready to go
  • Lime – to taste

Process:

Heat oil in a nonstick pan over medium-high heat. Add in the tofu/chicken-less strips/other protein. Saute for several minutes and set aside. Saute separately or combined, the different veggies. You will notice that I have also added baby kale – it is so easy to saute and not very tough like the regular kale. (If sauted separately, combine them all and) Add the chutney(s) that you would like to infuse in this appetizer. Saute for a few minutes until the flavors of the chutney are absorbed into the veggie/protein mixture and add salt/pepper to taste per your need.

Cut kernels off the cob throw it in to give the additional #crunchfactor. Cook for a few minutes (corn can remain crunchy.)

Spoon the mixture into Iceberg / Romaine hearts and add a slice of avocado. It is crrrunch time and hope you will like it as much as my kids (you know how it goes.. they start with a whine but devoured the moment I took the pictures for this blog)

Anyway, chow for now 🙂

PS:Credits to my NPHS high school sophomore Ankit for coming up with this blogging idea.
